Hi Friends,
Today is another short and sweet email because our babysitter is sick…for the second week in a row so I’m stealing minutes in-between watching Sam and trying to keep the house in order (the laundry situation is out of control), who is at a very active and dropping his nap stage! Send well wishes please lol.
In light of being busy and short on time, I’m sharing 3 of my favorite 5-ingredient meals.
5-ingredient baked chicken parmesan - this recipe is amazing, you literally put everything in a baking dish and put it in the oven, that’s it!


5-ingredient parmesan crusted pork chops - these are so great, can be made with pork or chicken! I like to serve them with a side salad

5-ingredient salmon sheet pan dinner - I love a good sheet pan meal, everything on one pan means less dishes!

Personal stories
This week we celebrated Ben, Freddie and Frankie’s birthday (they share a birthday!) We start the day off by waking the kids up with a candle and singing happy birthday so the first thing they start their day with is a wish. It’s one of our birthday traditions!
Sam wanted to have everything the other 3 had, we got him a little present to open so he wouldn’t feel so left out.
Nick and I went to the Dave Matthews band concert at Alpine Valley (outdoor music theater) and as soon as we got in, they told everyone to leave and to go shelter in their cars because of weather (crazy rain and tornado watch). We just left, and I’m glad we did, because 2 hours later they cancelled the show. We’re set to go see the rescheduled concert this weekend, wish us luck!
