Hi Friends,
Does anyone else feel like the week goes by at warp speed…especially weeknights? The kids are still little and already it’s nuts with soccer, ballet, piano and school.
Here are 3 weeknight meals that are low effort, high reward in deliciousness:
Sheet pan Greek potatoes with chicken sausage and zucchini (this one I prep and then just have Nick put in the oven, easy and done, we come home to a delicious dinner.)
Sloppy Joes - only 15 minutes start to finish, or, you could prep the filling beforehand and then just microwave it and serve. Or leave it in the slow cooker on warm if you’re eating at different times. I can guarantee Nick will see this and ask me to make these, they’re a favorite of his.
5 Ingredient chicken gnocchi alfreo pesto - a lovely 20 minute meal the whole family will enjoy.
When all else fails, let me recommend brinner (breakfast for dinner! we make scrambled eggs and waffles for dinner at least once every two weeks!)
VERY helpful for easy meals and healthy groceries is Hungry Root. Totally saves the day more times than anything.

The twins are in mini kickers soccer. Lots of outdoor playing now that the weather is warming up, and the first picture of Freddie and Frankie waving goodbye to Ben just melts my heart!
