Healthy pasta for meal prep - can be enjoyed hot or cold
Pepperoni pasta salad - these can be made in a jar or Tupperware container
Ham and Swiss with mustard maple mayo - this is a copycat of my favorite Panera sandwich, it’s just so delicious
5-Ingredient chicken salad - one of Nicks favorites!
Greek chickpea salad - serve with pita, this one is so so good.

Personal stories

Row 1: Twins celebrated their 100th day of school. Freddie got a haircut (he did not enjoy it, he was nervous they were going to use the clippers, even though they did not. Sam and Nick made Cornmeal Waffles. Nick googled for a recipe and MINE WAS #2 on GOOGLE!!!!! Made my day!
Row 2: We went to get burgers and then shared a sundae with the kids, it was hilarious how there were 6 spoons in it! Ben and I after I walked him to the bus stop and he wanted a picture because the sun was out, good enough reason for me.
Row 3: I took the younger 3 kids to Taxi and Tide, a play space for kids, they love it there and I love how clean it is!
Weekend reads
Just downloaded A Love Song for Ricky Wilde by Tia Williams (who wrote Seven Days in June which was so so good) and even though I’m only 1/3 way in, I’m already thinking it’s going to be one of my favorite books I read all month, it’s really good.
Finished Big Swiss and I felt disappointed, it was supposedly on all these best seller lists and was supposed to be funny and good. I didn’t laugh once, what did I miss? Thankfully I got this as a library book so I didn’t spend any money on it.

Love this recipe! We didn’t have bell pepper but added broccoli and peas, and about 1-1/2 tsp. green curry paste. We were using up some cooked quinoa and just waiting to put it in until everything else was well along, and nothing got overcooked or dry!
Thanks for a great meal that we’ll enjoy many times and with various ingredients!
