Freezer meals to save the day! I almost wrote and cookbook about them, and a delicious new high protein dinner!

There are two types of people in this world: those who see a freezer as a treasure chest of ready-to-go meals and those who open it, stare blankly, and wonder why they only ever stash half-eaten pints of ice cream and forgotten bags of peas.
I used to be the second type. Then life - kids, deadlines, exhaustion - turned me into a full-fledged freezer meal evangelist. At one point, I even almost wrote an entire cookbook about them. I had all the recipes outlined (122!), a proposal halfway done, and then... I had Sam. And lifeeee. So now, I’m just happy when I get to make freezer meals at all, and I really understand how hard it can be.
Because here’s the truth: freezer meals are not just about convenience. They are tiny acts of self-care, proof that past-you loved future-you enough to do something about it. They’re the reason you don’t have to panic when dinner sneaks up on you (which, let’s be honest, it always does).

In this weeks Love List I’m sharing a new makeup goodie, things we’re buying for our family room we’re updating/renovating (we just painted it and moved stuff so the term renovating doesn’t really apply, but it looks renovated omg) and a family movie that I think I’ve mentioned before but is so good we saw it again!!

Personal stories
Wow - what a weekend, we were busy! We went to a St. Patricks day parade. Who knew there were no less than FIVE Irish dance troops? It was probably the best parade I’ve been to in my entire life, it was fantastic…and an hr and a half long lol.
Then Nick went out with a friend and brought me a Taco Bell chicken chalupa supreme back, my fave, that’s true love right there lol.
I think I hit a record, I had an hour to buy leprechaun gifts for the kids (they made cute traps) and go to Costo, my Costco run, on a Sunday, was 22 minutes, and I ran into 2 people!! Here’s my what I usually get and what I do with it, my costco haul
