Healthy recipes for your New Year...here's to the weekend
Holiday recap and healthy recipes galore
Hi Friends,
This is the first newsletter of 2024, welcome! Can you believe how fast the holidays flew by? I took some time to be with my family when the kids had off of school, but let me tell you, that time just flew by. I share more in the personal stories section below. How are you? How were your holidays? Let’s dive in to healthy recipes for your New Year
Breakfast:
Green smoothie, that actually tastes good. Or a delicious Vitamin C smoothie
Breakfast Cookie – quick and healthy and gluten free. Perfect for breakfast of even a snack on the go.
Egg Cups – I absolutely love these egg cups. They’re super simple, easy to add-in a variety of vegetables and can be made ahead for meal prep.
Mains:
Lentil Vegetable Soup – This slow cooker recipe is consistently one of your (my readers) favorites and when you try it, you’ll see why.
Greek Chickpea Salad in a Jar – loving salads in a jar because they are so easy to grab and take with me to work!
Pasta Meal Prep – Yup, more meal prep! These pasta dishes are perfect for lunches and only use 5 ingredients.
5 Ingredient Healthy Slow Cooker Buffalo Chicken and Quinoa – healthy meals don’t have to lack in flavor and the buffalo in this recipe doesn’t disappoint.
Sesame salmon rice bowls – these bowls are so great and customizable and a personal favorite!
On the blog this week
Love List - In this weeks’ Love List we’re talking about the color of the year and some great TV dramas (we watched a lot during break after the kids went to bed.)
Personal stories
Highlights:
We went to the Zoo at night where they had Christmas lights, it was wonderful
Ben lost his second front teeth, so now both front teeth are gone!
The joy the kids got at opening presents, it was magical
Frankie got a big girl bed and now has a room all to herself and the 3 boys share a room (there’s a bunk bed and crib in there)
Nick learned to play a piano song for Christmas, it was very sweet, it was Frankie’s favorite song (Hark the Herald Angels Sing) and she sang along.
We baked together!
Weekend reads
Just started The Seven Year Slip based on Carley Fortune’s list of favorite things of 2023, then I saw she endorsed the book on Amazon "A gorgeous love story from one of the finest romance writers out there." —Carley Fortune, New York Times bestselling author of Every Summer After (I loved Every Summer After so much I gifted it to my sister for Christmas).
Reader comment
Omgosh!!!! This was delicious! On top of that my whole house smelled like I was cooking beef stew even though it has no meat. Everyone loved it…even the meat eaters. I didn’t change a thing nor would I want to. Excellent!!
