If my kids had a love language this would be it
Maybe the most perfect food for kids, perhaps ever? Waffles and books galore.

Late(r) than normal on a Sunday evening I was going through the contents of the fridge and saw I had some cottage cheese that had 2 days left before it expired.
I know most foods expiration dates are more of a ‘suggested…use your best judgment if it looks/smells/tastes normal’ type situation … but not dairy.
I’m very weird with dairy. If it says it’s going to go bad, I toss it.
Blame it on one too many rancid coffee creamers where I didn’t know if it was the beans or the dairy itself that was slightly bitter *shudders at the thought*
I was doing some meal prep making eggless waffles and so I just added about ⅓-1/2 cup cottage cheese in.
YOU GUYS! OMG! Protein waffles anyone? They were incredible! As they were cooling, Ben came in and asked to taste test them. He gave them a thumbs up and the next day told all his siblings about them, everyone enjoyed them.
To that end, waffles are such a huge hit in our house and part of our meal rotation. You can add mix ins, like cottage cheese, or sneak veggies in (hello zucchini waffles). You can even make a more savory-type waffle, like these cornmeal waffles and serve them with chicken tenders for an easy take on chicken and waffles.
My favorite big waffle iron is this one (yes, a little pricey, but I’ve had it for 12 years at this point) - and these little ones are only $10, we have 2!

I’m trying to spruce up my office a little bit, so I brought the muscle in (Nick lol) and he hung this beautiful shelf - also please notice the sunlight/light therapy lamp which I mentioned in last weeks love list - I swear that thing has made a difference.

Summer will be here before we know it and these sandals are all the rage. The price point is great, so grab a few colors while you can. Perfect for those Spring Break trips too!

“I made this soup with some changes but it’s absolutely delicious and my husband told me to make sure I make it again. I used golden potatoes because that’s what I had. Half and half instead of milk and sour cream in place of yogurt. I quadrupled the recipe and used some instant potatoes to help thicken the soup.”
