Hi Friends,
Today I’m sharing meatloaf 3 ways, it’s such a comforting and delicious dish! With all these recipes you can choose your ground meat of choice - ground beef, ground turkey or ground chicken.
Turkey meatloaf and roasted vegetables - made in a traditional meatloaf pan and the recipe I keep coming back to as my ‘classic’.
Ground turkey balsamic mini meatloaves - what I love about this recipe is that it’s a sheet pan meal with mini meatloaves, so without a ton of work you get a whole meal!
Meatloaf meatballs with pan sauce - this recipe is so good - I like to describe it as a simple recipe for really good meatballs in a really good sauce.
On the blog this week
Love List - In this weeks Love List we're talking about some cute sandals that have been making it onto most comfortable summer shoes lists and the best sheet pans, not to mention lots of things to watch and the chopped sandwich trend explained.
Everything I read and listened to in February -I felt like I continuously had a book in my hand or was listening to something this month, but there was only one 5-star book that really stood out. I share ratings and thoughts on all the books in this review post.
Weekly meal plan - the weekly meal plan is posted, it includes ideas for breakfasts, lunches and dinners and you can customize it and make a shopping list!

Personal stories
Ben got a haircut and we took a trip to Target- the kids were buying a present for their cousin and then asked if they could get post-its and paper clips, who am I to say no? Now, they’re all over the house lol, but they really have been playing with the notes and paper clips every day when they get home from school.
Weekend reads
Currently reading/listening to These Silent Woods. The narrator is perfect for this book, soothing and narrating getting anxious beautifully. I can’t wait to see how this thriller unfolds.
I just finished Change Your Paradigm Change Your Life and I’d give it a 5/5, it’s really good and has some really great take aways - plus it made me pick up a journal and start journaling again.
Reader comment
Thanks so much for posting this wonderful recipe. We have stopped eating beef and now I’m having to find recipes to substitute for burgers, tacos, meatloaf and such. These burgers were way better than beef burgers. This will be a staple in my monthly menu rotation.
