Summer sides we can't stop making….here’s to the weekend

Summer is officially underway around here! The kids started summer school and camp this week, and thankfully they’re loving it. I’m back in my lunch-packing era, and somehow our schedule feels even busier than during the school year. This week’s newsletter is short and sweet. I’m sharing some of my favorite summer side dishes—from classic potato salad to grilled veggies—the kinds of recipes that show up again and again at our table all season long. Wishing all the dads and father figures a very Happy Father’s Day weekend!

High protein pasta salad -easy, make ahead and makes a really good lunch too
Black bean and corn salad - I’ll make this and then serve quesadillas along side it for an easy meal!
Red skin sour cream potato salad - recreated this after having it from a butcher, it’s so much better homemade, the perfect side!
Balsamic grilled veggies - these are the ultimate vegetable side! Oven or grill!
Zucchini au gratin - I love bringing this in an aluminum pan, then you don’t have to worry about cleanup!
Tomato cucumber salad - this is the salad I use as a side to meats, works really well with Serbian sausages or any grilled meat.

Also, cannot believe it’s Father’s Day this weekend!! It’s a little late - maybe- but my Father’s Day gift is a picture of the kids with Dad! shirts on, and I’ve been doing this every year (here is a blog post about Father’s Day gift ideas!)
