When you don't really feel like cooking...here's to the weekend
5 easy recipe ideas with minimal effort
Hi Friends,
“What do you make when you don’t really feel like cooking but still need to get dinner on the table?” a friend recently asked.
It make me think for a second, but here are my suggestions, things that come together easily and don’t require a ton of ingredients, time or effort.
5 Ingredient chicken parmesan pasta - this one a miracle meal. You literally put all the ingredients in a baking dish and pop it in the oven, viola
Scrambled eggs and toast - don’t overlook the ease and amazingness of Breakfast for Dinner = Brinner, our kids love it. I’ll usually cook chicken breakfast sausage on the side or bacon for this one. I love Applegate for this
Burgers - I love having pre shaped burgers in my freezer, quick to warm up in a skillet or on the grill and the topping possibilities are endless, we love pizza burgers.
Meatball pizza with Caesar - pizza is another easy throw together meal. You can get premade crusts and then just top it with what you have on hand. I love this meatball pizza with Caesar because dressing is used as the sauce and then premade meatballs are used for a fun topping, but the possibilities are truly endless! And it’s so easy and quick!!
My last suggestion is an easy sandwich like this ham and swiss with maple mustard mayo! Or if there’s a crowd, a DIY sandwich bar!
If you want to make your life super easy, try the Oven Ready meals from Home Chef. I always feel like such a grown up when I use their meals because it’s so low prep/hands on but the result is a warm delicious meal on the table!
New on the blog
Healthy peanut butter chocolate smoothie - this nutrition powerhouse (spinach, banana, coconut water, peanut butter powder and cocoa powder) will help kickstart your day in the very best way, it’s so yummy too!! Also, you need to have PB2 powder in your life, sooo good!

Personal stories
It’s been such a busy week, it’s all a blur. Ben ended school and started camp. We had the family party for the twins and Ben, since they share a birthday. Then we had family in town visiting and staying with us. In the mix we went out to see my friends band The Dustbowl Revival (their song Honey I Love You just surpased 3 million on Spotify). Now it’s camps and figuring out summer.
