Your St. Patrick's Day menu...here's to the weekend
St. Patrick's Day food for breakfast, lunch and dinner and the story of my bad ankle tattoo!
Hi Friends,
Can you believe it’s St. Patrick’s Day is next week? It totally snuck up on me, but I’ve got you covered with some fun, festive, and (of course) easy recipes to celebrate. Whether you’re going all out with a St. Paddy’s Day feast or just want to add a little green to your plate, I’m sharing some delicious ideas to bring a bit of luck to your kitchen.
Also, this time of year always reminds me of my bad ankle tattoo - which my dad still asks if it’ll wash off lol. I shred this story in a love list, but in case you missed it, Freddie wanted a frog glass and this was the closest? Love this because – did you know – I have a clover tattoo on my ankle? My ankle tattoo started as a tribute to my dog, Clover - sweet, right? Except it was free (should have been a big red flag), done by a newbie at a friends tattoo shop, and, well… it looks like it. Think green circle blob with a stem. I tried to fix it once a few years later, but it didn’t get much better – something about how the skin absorbs green lol. Now, I just embrace it as my own little lucky charm—questionable artwork and all! ☘️
Green smoothie - start your day with this vibrant green smoothie, made with pineapple, mango, spinach, kale and banana.
Easy cucumber salad - this makes for a delicious green side for lunch or dinner
Corned beef pockets - these are such a fun (kid friendly) way to eat corned beef on St. Patrick’s Day - they’re filled crescent roll pockets.
Corned beef and cabbage - the best way to cook corned beef and cabbage is in the slow cooker, low and slow for the most amazing St. Patrick’s Day dinner
Bangers and smashed potatoes - a fun take on classic St. Patrick’s Day recipe that your whole family is sure to love, it’s a meal of deliciously fried sausages topped with crispy onions and served with cheddar topped smashed potatoes.
Chocolate chip oatmeal stout cookies -delicious cookies made with oatmeal stout!

On the blog this week
I shared the most amazing recipe for creamy slow cooker roasted pepper chicken with the option to make it into a freezer meal! This meal is awesome, let the slow cooker do the work for you - marinara and greek yogurt and roasted peppers, yum!
Why You’ll Love This Recipe
Easy & Hands-Off – Just toss everything into the slow cooker and let it do the work!
Creamy & Comforting – The combination of Greek yogurt and fire-roasted bell peppers creates an ultra-creamy and slightly smoky sauce.
Kid-Friendly – Even picky eaters enjoy this mild and flavorful dish.
Freezer-Friendly – Easily turn this into a freezer meal for those extra busy nights.

In this weeks Love List I’m sharing a work bag I’m totally in love with (it was only $28 and there’s lots of fun colors!) and protein pretzels and a new makeup system I kept seeing ads for that I’m trying out and so much more!
Personal stories
We celebrated my 40th birthday last weekend, it was so magical and delicious! We had one of the top 3 meals of my life at Rose Mary - an Italian/Croatian restaurant.

Weekend reads
Currently reading like 5 books at once because library holds became available. 2 of note that I’m loving are Dead Money - which is a “twisty thriller set in Silicon Valley, where Mackenzie Clyde, a lawyer-turned-investigator, is tasked with solving the murder of a tech CEO whose assets are frozen due to a "dead money" clause in his will. Navigating a web of high-stakes venture capital and corporate intrigue, Mackenzie uncovers dark secrets lurking behind the tech world's cheery facade.”
And I’m enjoying A Novel Love Story by Ashley Poston which follows “Eileen Merriweather, a literature professor who, after a car breakdown, finds herself in Eloraton—the fictional town from her favorite romance series. There, she encounters a grumpy bookstore owner and becomes entangled in completing the town's unfinished story, intertwining her own path to a real-life happily-ever-after.”

I love this recipe so much, it’s one I used to make all the time and am now going to make again, it’s a savory pie - think chicken pot pie, but black bean pie, yum!
I keep coming back for this recipe – it has become a family favorite!
