Growing up, my favorite summer dessert was when my mom would mix Creme de Menthe into a tub of Cool Whip, and we'd use fondue sticks to dip cut-up summer fruits into it. (How 70's/80's is that? :) Looking back now, I'm like "Wait...there's alcohol in Creme de Menthe..." I turned out fine, though. ;)
My favorite summer dish to make is an orzo salad with feta, veggies and a great lemon dressing. I can add grilled shrimp or chicken to make it more substantial.
